A fast-casual poke bowl restaurant in Montclair, New Jersey, bridging street presence and spatial identity through material play.

Challenge

Located at the crossroads of a new commercial development and a local art institute campus, the restaurant needed to establish a bold, youthful identity within a transitional urban context. The project called for an interior that could attract a diverse, fast-moving clientele while working within a limited footprint and construction budget. The client also wanted to integrate a self-ordering system, circulation strategy, and merchandise display into a cohesive spatial core.

Opportunity

 The design draws inspiration from the concept of inside as outside—using raw, exterior-grade materials like painted OSB panels within the interior to evoke a sense of casual energy and unconventional tactility. A suspended canopy of construction-grade board floats above the dining zone, blurring the boundary between enclosure and openness. At the center, a multi-functional service island anchors the space—housing trash disposal, utensil storage, branded collateral, and a bonsai tree that becomes both sculptural and symbolic.

Outcome

 Poke 360 offers a dining environment that feels both approachable and distinct—honoring the fusion spirit of Hawaiian poke through spatial hybridity and branding integration. The material palette and layout reflect the brand’s desire for flexibility, self-service, and street-level visibility. TXLabs led the full design and branding concept, coordinating closely with a freelance designer, local architect, and client to bring the space to life with minimal intervention and maximum identity.
